Elspeth’s grandparents were Danish and so she grew up eating many traditional Danish dishes. The Danes, and as she learned later, the Dutch make their cucumber salad like this:

  •             2 English cucumbers, thinly sliced, paper thin
  •                   (check the Market for our own farm raised English cucumbers)
  •             1 tbsp salt
  •             1 cup sugar
  •             1 cup vinegar
  •             Salt and pepper to taste
  •             Chopped fresh dill, also available at the Market

Thinly slice unpeeled cukes and place in bowl.  Sprinkle with salt and let stand for a couple of hours.  Pour off liquid and pat dry. In a small saucepan combine sugar and vinegar, stir over low heat until sugar dissolves, remove from heat and cool.  Pour over cucumbers, let stand for 30-60 minutes.  Season with salt and pepper and garnish with chopped dill. Delicious!
